Chokolade-hindbær-barer
Ca. 12-16 barer
Ingredienser:
3 ¾ dl glutenfrit havremel (evt. fra kværnede havregryn)
½ tsk. bagepulver
¾ tsk. himalayasalt
1 dl kokospalmesukker (evt. mere ved ekstra sødme eller hvis hindbærrene er meget syrlige)
½ dl smeltet kokosolie eller olivenolie
3-4 spsk. vand
5 dl optøede eller friske hindbær (jordbær, blåbær eller kirsebær kan også bruges)
3 spsk. ahornsirup
1 tsk. vaniljepulver
1 spsk. majsstivelse/Maizena
1 dl hakket chokolade – gerne 70 pct. mørk chokolade
Sådan gør du:
Sæt ovnen til 180 grader.
Læg bagepapir i en bradepande på ca. 20×20 cm.
Bland havremelet i en skål sammen med bagepulver, salt og kokospalmesukker. Rør det godt sammen. Hæld smeltet kokosolie og vand i blandingen, og ælt det sammen med fingrene.
Læg halvdelen af dejen i bradepanden, og tryk dejen flad og ud til kanterne, så bunden er næsten dækket.
Hvis hindbærrene ikke er helt optøede, kan man give dem et kort opkog i en gryde. Tag gryden af varmen, og hæld sirup, vaniljepulver og majsstivelse heri. Hindbærcremen må ikke være varm, når chokoladen hældes i. Rør det hele sammen, og fordel hindbærcremen over den fladtrykte dej i bradepanden.
Smuldr den anden halvdel dej over hindbærcremen. Bag det hele i 25-30 minutter ved 180 grader.
Lad kagen køle af i 15 minutter, før den skæres til barer i ønsket størrelse. Lad barerne køle helt ned, før de flyttes, så holder de formen bedst.
Barerne kan holde sig fire dage i køleskabet.
Blåbærtærte med chokolade
Ingredienser:
90 ml olivenolie eller neutral kokosolie
80 ml ahornsirup
½ tsk. vaniljepulver
1 æg
100 gram glutenfri melblanding (se herunder for hjemmelavet melblanding)
½ tsk. bagepulver
¼- ½ dl vand
50 gram hakket chokolade
Sådan gør du:
Rør ingredienserne sammen til en lind dej. Hæld gerne chokoladen i til sidst.
Fyld en 20 cm form med 250 gram frosne blåbær.
Hæld dejen over blåbærrene.
Bag kagen i ca. 20-25 minutter ved 170 grader varmluft.
Opskrift på hjemmelavet glutenfri melblanding: 50 gram fuldkornsrismel, 25 gram kartoffelmel, 25 gram majsstivelse plus ¼ tsk. johannesbrødkernemel – det hele blandes sammen i en skål og anvendes til ovenstående kage.
Cookies med chokolade
Ingredienser:
3 dl nøddemel, fx kværnede mandler, cashewnødder, hasselnødder (evt. kværnede solsikkekerner)
½ tsk. bagepulver
½ tsk. vaniljepulver
¼ tsk. salt
½ dl blød kokosolie. Må ikke smeltes!
½ dl ahornsirup
50 gram hakket chokolade
Sæt ovnen på 180 grader.
Sådan gør du:
Bland nøddemel, bagepulver, vaniljepulver og salt i en skål. Tilsæt kokosolie og sirup. Rør godt sammen.
Rør hakket chokolade i. Sæt kugler på ca. 1 spsk. på en bageplade med bagepapir. Bag i ovnen i 8-10 minutter ved 180 grader.
Lad cookies køle helt af, før de spises, så de bliver sprøde udenpå og bløde indeni.
Kage med chokolade og friske jordbær
Ingredienser:
2 æg
2 spsk. ahornsirup
2 spsk. fuldkornsrismel
1 tsk. bagepulver
¼ tsk. vaniljepulver
50 gram hakket chokolade
Sådan gør du:
Pisk æg og ahornsirup. Bland resten af ingredienserne i. Bag i en lille smurt form ved 160 grader i ca. 20-25 minutter. Server med friske jordbær.

Chokoladen må meget gerne være økologisk med 70 pct. kakaoindhold og uden spor af mælk. Hvis det er svært at finde chokolade uden spor af mælk, er det let at lave selv:
