Tarmen udgør et imponerende økosystem, hvor bakterier og andre mikroorganismer nedbryder rester af føde, som endnu ikke er blevet optaget i kroppen. En nyopdaget bakterie, Akkermansia muciniphila, som først blev isoleret og karakteriseret i 2004, udgør ca. 0,5-5 % af bakterierne i tarmen hos voksne. Den nyeste forskning tyder på, at bakterien hjælper os med at opretholde en sund tarmslimhinde og har antiinflammatoriske egenskaber. Ligesom med andre gavnlige tarmbakterier har vores kostvaner indflydelse på, hvor stor en procentdel de udgør af tarmens mikrobiota.

Vores tarmmikrobiota udgør en nødvendig del af fordøjelsessystemet og er ligeså personlig som et fingeraftryk. Diversiteten og sammensætningen varierer fra person til person alt efter alder, livsstil og sundhed. I tarmen er der et komplekst symbiotisk forhold mellem os og mikroorganismerne. Nogle af bakterierne kan endda, ved hjælp af forskellige kemiske stoffer, kommunikere med vores nervesystem og immunforsvar eller påvirke cellerne i tarmvæggen til at producere hormoner som serotonin. Der er efterhånden ingen tvivl om, at sammensætningen af tarmbakterier har indflydelse på vores sundhed.
Den slimelskende bakterie
Tarmens vægge og slimhinder har en ekstremt vigtig funktion i kroppen. De fungerer først og fremmest som en barriere, således at mikroorganismerne fra tarmen ikke kommer over i blodbanen. Tarmslimhinden producerer et slimlag, der sørger for, at indholdet i tarmen nemt kan bevæge sig videre i systemet. Slimlaget fungerer samtidig som kroppens egen prebiotika – det vil sige som en næringskilde for bakterierne. Zoomer vi helt ind på slimhinden, finder vi Akkermansia muciniphila, en bakterie med en størrelse på kun 1 mm i diameter. Navnet muciniphila betyder slimelskende og indikerer, at bakterien bruger slimen som nærings- og energikilde. Akkermansia nedbryder slimen ved hjælp af enzymer, den selv danner ud fra gener i sit genom. Når slimen nedbrydes, produceres kortkædede fedtsyrer, der kan optages gennem tarmen. Der er en gensidig fordel ved at huse netop Akkermansia, eftersom studier viser, at tarmens slimhinde trives der, hvor Akkermansia trives, da bakterien i sig selv stimulerer slimproduktionen og dermed er med til at vedligeholde tarmens indre.
Akkermansia er en sundheds-biomarkør
Tilstedeværelsen af Akkermansia ser ud til at korrelere med en sund tarmmikrobiota, og bakterien kan findes i tarmen allerede kort tid efter fødslen, da den overføres via modermælken. Et studie, der undersøgte sammensætningen af tarmbakterier hos børn, har vist, at overvægtige børn samt børn, der gentagne gange har indtaget antibiotika, har færre Akkermansia i tarmen i forhold til normalvægtige og raske børn. Det samme gælder overvægtige voksne og voksne med diabetes. I et andet studie viste man, at overvægtige mus har færre Akkermansia, og at slimlaget i tarmen er tyndere og mere utæt hos overvægtige mus end hos raske mus. En sund tarmslimhinde vil kun tillade gavnlige stoffer at blive optaget gennem tarmen, mens en utæt tarm slipper giftstoffer og stoffer, som kroppen kan reagere allergisk på, lettere igennem. En utæt tarm menes at være associeret med en del forskellige sygdomme og allergier som blandt andet eksem, psoriasis, irritabel tyktarm, fødevareallergi og cystisk fibrose. Desuden har forskerne fundet ud af, at et indtag af levende Akkermansia øger produktionen af bioaktive fedtstoffer tilhørende endocannabioid-familien, der har en antiinflammatorisk effekt på kroppen og regulerer produktionen af nogle tarm-peptider.

Studier tyder også på, at Akkermansia er glad for tranebær og aroniabær samt andre bær, der er røde eller blå, som indeholder flavonoider og omega-3-fedtsyrer som fx fås i fede fisk og valnødder.
