De fleste af os tænker ikke over kviksølvproblemet til daglig, fordi det blot ville gøre vores hverdag bøvlet, men flere og flere bliver dog alligevel opmærksomme på den helbredstrussel, kviksølv i grunden udgør.
Selen gør kviksølv harmløs
Vidste du, at du med et tilpas højt indtag af sporstoffet selen kan beskytte dig selv mod skadevirkningen af kviksølv? Det er nemlig sådan, at kviksølv og selen danner en kemisk forbindelse, som hedder kviksølvselenid, og den er harmløs for organismen. Fødevaremyndigheder i hele verden advarer (især) gravide mod at spise fisk som tun, laks og sværdfisk, som befinder sig relativt højt oppe i fødekæden. Advarslen skyldes, at fisk indeholder kviksølv, og jo større fisken er, desto mere kviksølv indeholder den. Ligningen glemmer imidlertid at tage højde for, at disse fiskearter ligeledes er gode kilder til selen.
Fisk er en god selenkilde
På en selenkonference, der blev afholdt i Stockholm i august måned i år, fortalte den amerikanske forsker Dr. Nicholas Ralston, at man godt kan skrue lidt ned for bekymringen. Så længe fiskens indhold af selen er højere end dens indhold af kviksølv, er der ingen grund til ikke at spise fisken, sagde han.
Mangel i Danmark
Hvad vi danskere til gengæld skal være opmærksomme på, er, at vi lever i en del af verden, hvor selenindholdet i føden generelt er lavt. Vores jordbund indeholder langt mindre selen end jordbunden i andre dele af verden, herunder store dele af USA. Hvor en gennemsnitsdansker får mindre end 50 mikrogram selen dagligt igennem kosten, vil en amerikaner let kunne nå op på over det dobbelte.
De vigtige selenoproteiner
Forskere har lavet undersøgelser for at forsøge at finde frem til, hvor meget selen en voksen person behøver for at være dækket ind. Her har man kigget på mætningen af nogle såkaldte selenoproteiner i kroppen (der findes mindst 25 forskellige af slagsen). Et af de selenoproteiner, der bedst egner sig til dette formål, hedder selenoprotein P. Det har vist sig, at med et dagligt selenindtag på omtrent 100 mikrogram er dette selenoprotein effektivt mættet og derfor i stand til at udføre sine forskellige opgaver. En af de vigtige opgaver for dette selenoprotein er at beskytte celler og væv mod oxidativ stress, så det er vigtigt, at der konstant er nok selen i blodet til at mætte proteinet.
Dansk selengær med god optagelighed
Eftersom kviksølv netop beslaglægger selen i organismen i den bindingsproces, der danner kviksølvselenid, skal man være opmærksom på at få nok selen hver dag. Det gælder især, hvis man bor i forurenet byluft eller er udsat for andre kilder til kviksølv. En gode måde at gardere sig mod selenmangel er ved at tage et selentilskud i tabletform. Den danskfremstillede selengær, SelenoPrecise, egner sig særligt til formålet, da den har høj optagelighed i kroppen. Pharma Nord, som producerer denne selengær, har med flere end 40 videnskabelige undersøgelser solid dokumentation, som viser, at kroppen optager næsten 90 % af selenindholdet i SelenoPrecise. Endnu vigtigere er det, at hele 74 % af den optagede selenmængde bliver i kroppen. Det vil sige, at selenet bliver absorberet i blandt andet selenoprotein P og andre selenoproteiner, som behøver selenet.
