Konserveringsmidler forlænger holdbarheden af en fødevare eller en bodylotion ved blandt andet at skabe dårlige vækstbetingelser for mikroorganismer som svampe og bakterier. Men mens nogle konserveringsmidler er helt uskadelige, kan andre give hormonforstyrrelser, allergi eller eksem.

Fødevarer uden konserveringsmidler har som regel en kort holdbarhed, da de let kan gå i forrådnelse pga. oxidation eller overvækst af mikroorganismer som bakterier eller svampe. Derfor har husholdninger gennem tiden benyttet konserveringsmidler som sukker, salt og eddike til at forlænge holdbarheden af fødevarer. Med de mange forarbejdede fødevarer, som vi køber i dag, kan det være nødvendigt at tjekke varedeklarationen for konserveringsmidler, der har E-numre fra E200-E299. Konserveringsmidler tilsættes i øvrigt også til kosmetik og personlige plejeprodukter! Igen er formålet her at undgå overvækst af svampe og bakterier i fx cremer, som kan resultere i hud- eller øjeninfektioner.
Et surt miljø hæmmer mikroorganismers vækst
Mikroorganismer, som ofte stammer fra råvarerne i produktet, trives bedst i miljøer, hvor der er adgang til vand, og hvor pH-værdien ligger på ca. 5-7. Falder pH-værdien til 4,5 eller derunder, hæmmes mikroorganismers vækst. Mange konserveringsmidler er syrer og virker ved at sænke pH-værdien, så holdbarheden forlænges. Oxidation af madvarer kan også mindskes ved at hæmme aktiviteten af enzymer som bidrager til fx brunfarvning af æbler og avokadoer. Enzymerne har en stærkt nedsat aktivitet ved en pH, der er lavere end 4, hvilket er årsagen til, at citronsaft forhindrer æbler og avokadoer i at oxidere og blive brune. Der findes mange helt naturlige og uskadelige stoffer som fx æblesyre, mælkesyre og eddikesyre, der ofte anvendes som konserveringsmidler med god effekt.
De hormonforstyrrende parabener
Der anvendes stadig parabener i fx cremer, men fem af parabenerne blev forbudt i EU i 2013, da man efter længere tids forskning endelig kunne bekræfte, at de er hormonforstyrrende. Der er andre parabener, som stadig er tilladte, men visse af stofferne er stadig under mistanke for at have hormonforstyrrende effekter. Hvis et stof er hormonforstyrrende, kan det forringe fertiliteten i de mennesker, som er udsat for stofferne og for næste generations evne til at formere sig. Konsekvensen af forbuddet i 2013 blev, at de hormonforstyrrende parabener blot blev skiftet ud med andre stoffer, der måske er endnu farligere, og endnu ukendte for forbrugeren. I en del tilfælde er parabenerne skiftet ud med stoffet methylisothiazolinone (MI), som er blevet brugt i personlige plejeprodukter som shampoo, cremer og kosmetik siden 2005. Stoffet er stærkt allergifremkaldende og kan give en allergisk reaktion både ved direkte kontakt med et produkt, som indeholder stoffet, og gennem luften, da stoffet også bruges i lim, maling og rengøringsmidler.
Parfumestoffer findes også(!) i naturkosmetik
I både almindelig kosmetik og naturkosmetik, deodoranter og cremer findes der parfume som fx benzylalkohol, der kan øge risikoen for udvikling af parfumeallergi, hvilket gælder, uanset om parfumestofferne er af naturlig oprindelse eller syntetisk fremstillet. På varedeklarationen står der ofte blot parfum eller fragrance, hvilket kan referere til flere parfumestoffer, så det kan være svært at gennemskue, hvilke stoffer produktet indeholder. Derfor er det letteste at gå efter produkter, som er helt uden parfume, hvis man ønsker at mindske risikoen for parfumeallergi.
Konserveringsmidler du skal holde øje med
Methylisothiazolinone (MI)
Stoffet er stærkt allergifremkaldende. Det er tilladt i shampoo og håndsæbe samt maling og rengøringsprodukter.
Parabener
Visse af de parabener, som stadig er tilladte i personlige plejeprodukter, er mistænkt for at være hormonforstyrrende. Propyl- og butylparaben er i Danmark kun forbudt i produkter til børn pga. hormonforstyrrende effekter.
Triclosan
Stoffet findes i tandpasta og deodoranter, men er værd at tjekke for, da det er mistænkt for at være hormonforstyrrende og skabe resistens hos bakterier.
Parfumestoffer
Parfumestoffer, naturlige eller syntetiske, giver risiko for udvikling af parfumeallergi. Brug produkter uden parfume.
Nitrit og nitrat
Stoffer som kalium- og natriumnitrit og -nitrat er hyppigt brugte konserveringsmidler i bacon, skinke og pølser. Stofferne kan omdannes til nitrosaminer, som kan være kræftfremkaldende. Undgås ved at købe dansk økologisk kød.
Sulfitter og svolvdioxid
Sulfitter og svolvdioxid kan give allergi. Fx kan vin indeholde sulfit, og tørret frugt er ofte behandlet med gassen svovldioxid. Stofferne kan undgås ved at købe økologiske fødevarer.
