Julebageri (næsten) uden slinger i blodsukkervalsen

Der er ikke noget som julens krydderier. Kanel, kardemomme og nellike er indbegrebet af julebag. Ofte serveres krydderierne i selskab med rige mængder af sukker – og selvom det smager dejligt, kan det være nærende for både blodsukker, immunforsvar og fordøjelse at bruge krydderierne i andre mindre søde udgaver af julebagværk. Her er et bud på dette, nemlig i form af små muffins. De er så skønne og sunde, at du fint kan bruge dem som et mellemmåltid. Nyd dem sammen med en god kop te.

Krydrede ”christmas”-muffins

 

Det skal du bruge: 

200 g mandler

200 g valnødder

130 g dadler

1 tsk. vaniljepulver

2 tsk. kardemomme

3 tsk. kanel

1 1/2 tsk. nellikepulver

1 tsk. allehånde

1 tsk. bagepulver

Skal og saft af 1 økoappelsin

4 æg

Valnødder til at toppe muffins med

 

Sådan gør du:

Kom nødder og mandler i en foodprocessor, og kør dem til mel.

Kom så alle de øvrige tørre ingredienser i, og kør en omgang mere.

Så er det i med dadler, appelsinskal og appelsinsaft. Derefter 1 æg ad gangen, til det bliver til en lind og luftig masse.

Op i muffinsforme, pynt hver muffin med en valnød, og bag ved 170 grader i ca. 20 minutter.

At krydderier som kardemomme og kanel hører blandt julens favoritkrydderier, er næppe en tilfældighed. Ikke alene har de en dejlig varmende effekt i en kold tid. Krydderierne har også andre gavnlige effekter.

Ud over at have styrkende effekt på immunforsvaret såvel som leveren ser kardemomme fx ud til at fremme fordøjelsen og modvirke oppustet mave. Ikke tosset i en juletid. Kanel stimulerer bl.a. insulinfølsomheden i cellen, og det er guld værd for et (jule)udfordret blodsukker.

Og når vi nu er ved blodsukker, så tænker du måske: ”Jamen, tørrede frugter er da også en stor udfordring for blodsukkeret.” Og det er helt rigtigt, men du får i det mindste det søde sammen med masser af vitaminer, mineraler og lidt fibre – og det er (fra et ernæringsmæssigt synspunkt) langt at foretrække frem for et hvidt raffineret produkt.
